Winter beet salad
A vibrant winter salad featuring roasted beets, fresh greens, creamy goat cheese, and crunchy walnuts. This nutrient-rich dish is packed with fiber, antioxidants, and heart-healthy fats.
Ingredients
3 medium beets, peeled and cut into wedges
2 cups arugula or mixed greens
¼ cup crumbled goat cheese
¼ cup toasted walnuts or pecans
1 tablespoon olive oil
Salt and freshly cracked black pepper
Dressing
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
Pinch of sea salt
Instructions
Roast the beets
Preheat the oven to 400°F. Toss beet wedges with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30–35 minutes until tender.
Prepare the dressing
In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, and salt.
Assemble the salad
Place arugula or mixed greens on a serving plate. Top with roasted beets, goat cheese, and toasted walnuts.
Finish and serve
