Spinach and persimmon salad

A vibrant, nutrient-rich salad combining sweet persimmon, fresh spinach, creamy cheese, and crunchy walnuts. This light but satisfying dish provides fiber, antioxidants, and healthy fats that support overall metabolic health.


Ingredients

  • 3 cups fresh baby spinach

  • 1 ripe persimmon, thinly sliced

  • ¼ cup crumbled goat cheese or feta

  • ¼ cup toasted walnuts

  • 1 tablespoon pomegranate seeds (optional)

Dressing

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey or maple syrup

  • Pinch of sea salt

  • Fresh cracked black pepper

Instructions

  1. Place the baby spinach in a large bowl.

  2. Add the sliced persimmon, toasted walnuts, and crumbled goat cheese.

  3. Sprinkle pomegranate seeds over the salad for extra color and flavor.

  4. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.
